They serve as antioxidants. These vitamins will react with toxic free radicals that are produced as a result of aerobic cellular respiration. The free radicals will be neutralized by the vitamins into less toxic forms in the body. This will result in lower levels of inflammation in the tissues.
Vitamin C is found in citric fruits and brightly colored vegetables such as sweet peppers.
Vitamin E is found in vegetable oils, seeds, and nuts.
