Vegetables are not considered high-quality proteins, because they rarely contain all of the essential amino acids in a ratio that humans require. Rather, vegetables can be consumed with other foods to provide a complete balance of the amino acids. By choosing complementary proteins, vegetarians can still meet their required protein intakes.
