Insoluble fiber does not dissolve in water, whereas soluble fiber does. Insoluble fiber holds water in the stool and thereby helps with constipation, diverticulosis, certain cancers, heart disease, and obesity. Soluble fiber binds bile salts and can help to lower cholesterol (and thus reduce the risk of heart disease) as well as slow the digestion of carbohydrates, thereby lowering the risk of constipation and obesity and helping to lower blood glucose levels after meals in people with diabetes.
