How is ordering handled in a small-volume operation?
◦ Owner or department heads order their own supply up to a pre-established price limit
◦ Very informally, with the chef and owner taking care of all of it in whatever way suits them
◦ The bookkeeper does all ordering, as they handle invoices and know how to contact vendors
◦ The purchaser handles all orders and reports to the owner
