Microbes and enzymes must have a certain amount of water to live and reproduce. If the water is removed, the food is preserved because microbes cannot survive without water.

Answer to Question 2

In atmospheric storage, the fruit is placed in a dark chamber with a constant temperature between 32F and 55F, depending on the type of fruit. Then oxygen and carbon dioxide levels are decreased and replaced with the inert gas nitrogen. The fruit will stay fresh for many months if the proper balance of oxygen, carbon dioxide, and nitrogen is maintained; the temperature remains within the correct range; and the chamber remains dark.
