Answer to Question 1

Vacuum drying produces the highest quality of product, but is also the most costly.

Answer to Question 2

Dehydration results in decreased weight, increased amount of product per container, changes in the concentration of nutrients, some loss of nutrients, some chemical changes, and decreased shipping costs.
