Foods are packaged for shipping; dispensing; improving the usefulness of the product; protection from microbial contamination, dirt, insects, light, moisture, drying, flavor changes, and physical alterations; and for marketing and selling purposes.

Answer to Question 2

Ice cream manufacturing comprises two processes: (1) mix-making, which uses mixing, fluid flow, heat transfer, and size reduction; and (2) freezing, which involves fluid flow, heat transfer, and mass transfer of air into the ice cream.
