You read a research article that states that frozen fish and poultry become rancid through oxidative rancidity faster than beef does. After studying fats and oxidative rancidity, explain the reasons for this.

Oxidative rancidity takes place in polyunsaturated fatty acids when oxygen adds to the double bonds. Fish and poultry contain more polyunsaturated fatty acids than beef does, so they would be more likely to undergo oxidative rancidity.
