The first choice would be processed cheese. In the making of processed cheese, there are emulsifiers added to help combine the fat and added water. These emulsifiers aid in making a smooth, non-stringy cheese product. Sharp and extra sharp cheeses may also be used, and they enhance flavor. They exhibit fat separation and some stringiness, but are better than mild and medium cheeses that exhibit more stringiness.
