Emulsifiers consist of polar (hydrophilic or water-loving) and nonpolar (hydrophobic or water-hating) groups. The polar groups orient toward the water, while the nonpolar groups orient away from the water or toward the oil. This enables the emulsifier to form a monomolecular layer and coat the interfaces so that contact between the oil and water is prevented.
