C. botulinum is of concern, as it is an exotoxin that produces spores in low acid and anaerobic environments. Therefore, it could be growing in the neighbor's green beans, because she processed them in a water bath canner. This did not heat the green beans sufficiently to destroy the C. botulinum spores.
