What does Kosher mean? How would Kosher food affect a diet instruction, particularly Kosher meat?

Total Ca includes bound and free Ca. Ionized Ca is free, and is the more important form.

Answer to Question 2

Kosher means blessed by a Rabbi, but concerning meats it also means processed in salt to remove any blood. This means that Kosher meats would have a high salt content.
