The article listed below explains that it is well known that plant sterols compete with cholesterol for space within bile salt micelles in the intestinal lumen and thereby reduce cholesterol absorption. The article reviewed several studies and found that the sterols reduce the production of cholesterol. There are several other studies that have shown a reduction of cholesterol with a low-fat, high-fiber diet that included plant sterols. The American Heart Association recommends them.
