Following are some of the factors a student should be considering before such an instruction. The RD must learn as much as possible about the Mexican culture. If the language barrier is a problem, make sure an interpreter is available. Use food models, pictures, handouts in Spanish, etc., as teaching aids. Have available appropriate examples of food substitutes based on Mrs. MG's usual diet. Have examples of low-fat recipes that would be similar to the foods Mrs. MG cooks. If not already available, prepare these recipes by means of pictures instead of words so they can are more easily understood. Be careful to use foods that Mrs. MG can afford.
