Answer to Question 1

The host is usually expected to help whenever possible. When it is extremely busy, he or she may be required to bus tables, pour coffee, fill waters, and help with orders. This means that the host has to be flexible by nature as well as having the capacity to perform multiple tasks in order to help make the operation run smoothly.

Answer to Question 2

Many popular beverages are produced using fermentation for the process of alcohol production. This fermentation process normally produces alcoholic beverages with relatively low proof levels.

Distilled beverages are produced for both flavor enhancement and for their higher alcohol contents. It is important that students recognize the difference between fermented beverages such as beers and wines and distilled beverages of higher proofs as they design and implement programs and procedures designed to help ensure the responsible service of all alcoholic beverages.
