Careful analysis can be done to determine whether dining room space should be allocated for demonstration cooking (which occurs when guests can view personnel working in production areas), significant buffet and other self-service counters, and permanent walls that break the dining room area up into small group dining spaces. Note: removable screens, planters, and other methods can be used to divide dining areas into attractive but non-permanent spaces.

Answer to Question 2

Irish Coffee - Irish whiskey, coffee, sugar, and a dollop of whipped cream

Spanish Coffee - Kahlua, coffee, 151 rum and triple sec

Caf Diablo - flamed orange peel with coffee, brandy bitters and vermouth

Caf Royal - with Bourbon or brandy

Mexican Coffee - with tequila and sweetened with Kahlua

Caf Pucci - with Trinidad rum and Amaretto

Kioki Coffee - with brandy

Royal Street Coffee - with Amaretto, Kahlua, and nutmeg
