Answer to Question 1

All restaurant and foodservice operations should have written policies and procedures relating to an effective progressive discipline program. Some employers use a formal progressive discipline process that consists of a series of steps that includes coaching, oral warnings, written warnings, probation, and termination. An oral warning is all that is necessary to encourage many employees to improve. Written documentation or probation may be necessary for others.

Answer to Question 2

Reasons for the importance of task lists and task breakdowns should be noted. As well, time spent in on-going training and/or other employee meetings can be devoted to development of these tools. The restaurant manager should note that these tools do not need to be developed all at the same time but, rather, according to a reasonable schedule. Example: if one or two task lists or task breakdowns are developed each month a comprehensive set of these basic training resources will be available in a reasonable time.
