The Eqyptians noticed that geese tasted best after gorging themselves with grains growing along the Nile just prior to migrating. They started force-feeding the birds which caused the liver to store extra fat and become enlarged. France leads the world in foir gras production, which is made from the enlarged livers. It is banned in several states in this country but widely accepted in Europe.

Answer to Question 2

Natural casings are made from the intestines of sheep, pig or cow. They are all natural. Synthetic casings are man-made. They are more uniform in size and have less chance of defects.
