Georgian cuisine is a very unique and different type of cuisine. A lot of that difference
comes from the foods and herbs that are used in the dishes of Georgian cuisine. There
are ingredients that are used in Georgian cuisine that are not really used elsewhere.
Some of the unique and interesting foods and ingredients that are used are tkemali (sour
plum), kvatsarakhi (barberry syrup), tklapi (fruit leather), masharabi (sour, spice
pomegranate syrup), and the herbs lovage and marigold leaves. Their flavoring
combination for cooking is not that unusualonions, garlic, peppers, or chilies; and
neither is their standard herb combination of cilantro, parsley, dill, and basil. It's just
that when they take common ingredients they have preparation techniques which are
totally unique like churchkhela which is nuts that have been soaked in grape juice and
dried or tabaka which is chicken which is weighted and pressed and fried.
