Kibbeh is one of the most unique and interesting foods from any culture throughout the
world. It is simple yet complex. It is simple in that it always contains bulgur wheat and
onions. It often has lamb, but not necessarily. Traditionally it has been made by
pounding the ingredients together in a stone mortar and pestle. There are four basic
types which include raw kibbeh, kibbeh in patty shape, stuffed kibbeh, or layered in a pan
and baked. There are different methods for cooking kibbehsauteed, deep-fried, or
simmered in a sauce. It usually contains the spicing mix of cinnamon, cumin, and
allspice. Lastly, and most importantly, it is the national dish of Lebanon.
