Dolmades are stuffed grape leaves. Fig leaves were used originally and then grape
leaves. These leaves are softened through cooking and often are pickled. The most
common stuffing is white rice. They are served with an egg lemon sauce (avgolemeno).
Other wrappers that are used can be cabbage leaves, chard, or collard greens. Other
fillings can be goat cheese, cooked lamb, or chopped vegetables.
