The process of making sushi rice begins by choosing the appropriate rice. To
make sushi rice you begin with short-grain rice. The ratio of water to rice is 7
ounces of rice to 10 ounces of water. The rice should be first rinsed, soaked, and
drained. The rice should be soaked for about 10 to 15 minutes. This cold water
is drained off before cooking. Pour the rice and the measured water into the
appropriate pan. Bring to a boil, reduce to a simmer, cover the pot, and cook 15
minutes after boil. Turn off the heat, not touching the rice. Pour 1 to2
tablespoons of water around the edges of the rice. If it crackles you should add
more water, but not too much. Allow this rice to sit for 10 to 15 minutes.
