Why are flavoring agents added after the candy syrup has finished cooking?

So they do not hinder or impact crystallization.

Answer to Question 2

Moisture content of candies affects consistency. The more water a candy retains, the softer the consistency of the product. Candies absorb moisture from the air on humid days, making the candy softer than desired.
