Answer to Question 1

Sugar added to a starch paste decreases viscosity of the paste due to the sugar's ability to tie up water. This results in less water being available for swelling of the starch granules.

Answer to Question 2

Gelatinization refers to the changes that occur when a starch is heated in the presence of water. Gelation is the formation of a three-dimensional starch network.
