High-fructose corn syrup (HFCS) is a glucose-rich syrup produced by the treatment of corn with enzymes. HFCS can have a variable fructose content but usually contains equal amounts of glucose and fructose. The ratio of fructose to glucose changes depending upon product use. HFCS is found in all commercially sweetened items in U.S., e.g., soda, baked goods, condiments, etc. The cost to produce HFCS is far less than that of sucrose, increasing its presence in the American diet.
