The body's cells have enzymes that are optimized for glucose breakdown to produce ATP through cellular respiration. Glucose produces 4 calories/gram versus 9 calories/gram for fat. The body cannot break down fat completely to produce ATP energy without the presence of pyruvate. This pyruvate is produced during glycolysis that is the breakdown of glucose.
The nutrition guidelines recommend that 45-65 of all calories come from carbohydrates as compared to 20-35 of all calories that should come from fat.
