Serum protein levels can aid in the assessment of protein-energy status, but the levels may fluctuate for other reasons as well. Because serum proteins are synthesized in the liver, blood levels of these proteins can reflect liver function. Metabolic stress alters serum proteins because the liver responds by increasing its synthesis of some proteins and reducing the synthesis of others. Values are also influenced by hydration status, pregnancy, kidney function, zinc status, blood loss, and some medications. Because serum proteins are affected by so many factors, their values must be considered along with other data to evaluate health and nutrition status. Examples of serum proteins that might be measured include albumin, transferrin, and retinol-binding protein.
