The first stage, fatty liver, can result from even a few days of excessive drinking. The liver metabolizes alcohol first and is thus unable to metabolize all of the arriving fat, so fat accumulates. In the second stage, alcoholic hepatitis, the liver becomes chronically inflamed by some by-products of alcohol metabolism, such as acetaldehyde, which are toxic to the liver. In the third and final stage of liver disease, cirrhosis, liver cells die, forming scars that prevent the liver from performing its normal metabolic functions.
