It's always a little risky to extrapolate and predict growth, but a smart technique would be to obtain sales data in this industry for the past three or four or 10 years, and extrapolate through a moving average. A three-year moving average would take the data from years one, two, and three and compute a mean; years two, three, and four and compute a mean; years three, four, and five and compute a mean, etc., and then you'd fit a curve to these data (e.g., via regression). The idea is that including data on the surrounding years helps stabilize the estimates.
