Answer to Question 1

Video recording provides a relatively permanent recording, allowing you to re-check your data to resolve ambiguities. At the same time, it's not perfect because a given camera angle will highlight some behaviors but may obscure other important ones.

Answer to Question 2

Sampling in observational research involves three different elements. First, who will be observed? The nature of the population needs to be determined. Second, what specific behaviors will be the focus of observations? Third, what kind of temporal sampling will be done: continuous, intermittent, time of day, etc.
