One is that the climate changed. Increasing drought and reduced plant cover may have forced people and wild plants and animals into smaller areas, where people began to tame wild herbivores (including the progenitors of sheep and goats) and sow wild seeds (including the progenitors of wheat and barley) to produce a more dependable food supply.
A more widely accepted theory is that their own growing populations in areas originally rich in wild foods forced people to find new food sources, so they began sowing cereal grains and breeding animals.
