Organic matter is a binding agent that joins the mineral portions of the soil together. Aggregation of soil particles is important in soil tilth and aeration. Organic matter helps store water in the soil. It absorbs water like a sponge and retains it for plant growth. The last function is chemical sequestration. Organic matter can tie up toxic chemicals and pesticides that would otherwise contaminate groundwater.
