Water has an essential role as a solvent for many compounds. It dissolves salts such as sodium chloride. In plants, water carries minerals, sucrose, and hormones. In humans, it is involved in excretion of waste products in urine. The transpiration stream is the main route for movement and uptake of minerals such as NO3. It provides turgor or support for cells. Water evaporation from leaf and skin surfaces is able to serve as a heat loss.
