It also can reduce freezer burn in frozen products. High fructose corn syrup is a blend of fructose and glucose and is produced from corn syrup, which is glucose. The process of producing high fructose corn syrup has several steps:
1 . Corn grain is mechanically processed to extract starch.
2 . Starch is enzymatically broken down by amylase to glucose corn syrup.
3 . Glucose is enzymatically treated with glucose isomerase to form a mixture containing about 42 percent fructose.
4 . The 42 percent fructose-glucose mixture is then separated and filtered to increase the fructose proportion until it predominates.
