Answer to Question 1

Multiple evacuation is several short vacuums in succession that are broken in between with dry nitrogen. The nitrogen absorbs and/or dislodges moisture in the system, making it easier to remove on subsequent evacuations.

This is accomplished by using speed increasing gears.
