Primarily, because the fine dining establishments have a customer-base which demands varied options and therefore will be more able and willing to purchase and store more expensive, high price point wines. Therefore one's knowledge of wine and the yearly vintage distinctions become much more imperative versus beer and spirits where vintage dates don't typically play a significant role.
