How full should wine glasses be filled?

Question 2

Some restaurant managers have moved aggressively to automate their beverage dispensing systems to reduce potential bartender and server theft.
 
  Other managers feel that this depersonalizes the dining experience, and most guests like to see a bartender actually pour drinks. What do you think?

Glasses are generally filled one third to half full, which permits swirling to experience the full bouquet that the wine has to offer.

Answer to Question 2

One compromise might be to use a beverage dispensing system in a service bar operation that produces drinks for servers taking restaurant orders and to use a manual dispensing system for the (relatively few) guests seated at the bar. Restaurant managers should talk with guests and really know their market before making this decision.
