This question is designed to reinforce to managers their critical role in ensuring the responsible service of alcohol. Policies must be in place to prevent the over-service of alcohol to all guests even if they are regular customers. If bartenders consistently violate this policy they must be immediately corrected and if their behavior does not change they must be terminated.

Guests must also be informed about the importance of responsible alcohol service. In most cases, if managers handle these conversations carefully and with tact, guests will understand that the manager has the best interest of the guest at heart and the conversation will go well.
