The tray is placed on a tray stand next to the table to be bussed. The dishes are stacked on

the tray according to sizelarge plates together, small plates and saucers on top of large plates or on the side of the tray, glasses and cups around the edge of the tray as close to the plates as possible. Flatware should be placed together along the side of the tray. Stack the heaviest dishes on the side of the tray that will be carried on the shoulder. Lighter pieces can be placed around the edge. Soiled napkins and place mats are rolled and placed on the tray, unless it is the policy of the restaurant to place napkins and place mats on a separate tray. Care must be taken not to accidentally wrap any flatware in paper or it will end up in the trash instead of the dishwashing machine. Follow the procedures listed above to properly bus a table. Then lift the tray according to the loading and carrying steps previously discussed, remembering never to lift more than you are comfortable with handling.
