The history of the restaurant industry is replete with examples of operations that did a good job of servicing its guests but did not have sufficient cash flow to sustain the business until a sufficient base of customers was established. For this reason, many food service professionals feel that marketing is an area that demands as much attention as does proper food preparation and service.
