store and age most red wines and many full-bodied white wines. The industry standard is
to use French or American oak as the preferred wood. Wood can soften a wine's texture,
alter the wine's color (from more golden-yellow, depending on the length of aging), and
assist in creating a more complex beverage. Factors that affect the ability of barrels to
impart flavor and that influence the extent of the aging process include (1 ) type of wood
(2 ) the size of the barrel, (3 ) age of the barrel, (4 ) the level of toast, and (5 ) the aging
time.
