Restaurants that can reduce turnover have a better chance to return a positive return on investment compared to those that do not. Hourly wage employee turnover ranges between 150 percent and 200 percent while managerial turnover of about 50 percent is common. Two hundred percent turnover means that, in any given year, management replaces two times the number of employees employed by the operation. The problem is made worse by a shrinking labor pool that is expected to go from 11.3 people per job in 1990 to 6 people per job in 2010.
