Answer to Question 1

Use a drip pan that is deep enough to hold the expected amounts of ice melt, or use a pan that is equipped with a drain and hose that flows to a bucket below the table.

Answer to Question 2

Risers are used to vary the heights of the platters creating an interesting and eye appealing display.
