To make frijoles de olla, beans pot-cooked the Mexican way, start by rinsing the
beans. Then the beans are put in a pot and covered with water. Bring this to a
boil and then lower to a simmer. Bacon or another pork product could be added at
this time. Cover, or partially cover, the pot and simmer until the beans are tender,
2 to 3 hours. Season beans with salt, and simmer until totally soft. The beans can
be held under refrigeration for 5-7 days.
