Mexico's contributions to world cuisine are very extensive and varied. It is one of
the favorite cuisines worldwide. One of the reasons for that is because the cooks of
Mexico have taken inexpensive and widely available ingredients and turned them
into many, many different dishes. With corn, beans, and rice they formed a solid
basis for creating multitudes of dishes due to the variations. The flavoring that is
added is relatively strong allowing those simple ingredients to shine. To the basics
add onions, tomatoes, garlic, and chilies and the breadth and quality of dishes
grows. When various spices and herbs and other specialty ingredients of Mexico
are added there is a cuisine which is extremely flavorful, filling, and inexpensive.
There is no small measure of brilliance in this process.
Specific dishes which came out of this culture which stand alone for their quality
characteristics and enjoyment are moles, enchiladas, chile rellenos, tamales, and
tacos. The dishes of Mexico have spread across the planet and are one of the most
important cuisines to have ever been created.
