color to a variety of dishes in the Caribbean, Mexico, and India. It is the natural
element which provides the orange color of cheddar and American cheese. The
color can be extracted through crushing and pressing the seeds. It is often added
to oil to be used in cooking. It can be made into a paste and rubbed on meats and
seafood. It is used in the Caribbean to color and flavor rice, beans, soups, stews,
and is brushed on chicken or fish before grilling.
