Ethiopian spiced butter is known as Niter Kibbe. It is made with spices such as
fenugreek, cardamom, cinnamon, nutmeg, cloves, and turmeric. These are dry
roasted. Then butter is placed in the pan with the hot spices. Onion, shallots,
garlic, and gingerroot are added and simmered for at least a half hour. This mix is
then strained well and the spiced butter is refrigerated for later use.
