Religion (Islam) was an important cultural influence on Persian-Iranian cuisine.
Because of the prohibition of alcohol, fish without scales, and pork the cuisine was
moved in a different direction with a heavier use of lamb and yogurt and fruit drinks
instead of alcohol. Another religious influence which then influenced cuisine was the
following of Zoroaster, a Persian religious figure. The belief of Zoroasterism is a
spiritual concept that all things should be balanced in life including food. Certain foods
like animal fats, chicken, wheat, sugar, and dried fruits and vegetables are considered
heating to the human body and other foods like beef, fish, rice, dairy, fresh vegetables
and fruits are considered cooling. This balance of heating and cooling foods is
evidenced throughout Persian-Iranian dishes. Another cultural influence in Persian
Iranian cuisine is the dominance of women in the kitchen. Men rarely cook so women
have been predominant in the preparation of this cuisine from the very beginnings.
