Dry pastas hold up well to boldly flavored and firm sauces. They work especially
well with sauces with seafood and light vegetable sauces. Thicker, richer sauces
work well with thick dried pastas like thick spaghetti, bucatini, and smaller shaped
pastas. Larger ridged hollow tubes like rigatoni and penne or shells stand up to
meat, beans, and chunky sauces. Fusilli works with dense creamy sauces which
will cling to its ridges.
