To develop a schedule, the previous sales for the same or a similar time of year, month, day, and
even hour should be reviewed. This information is considered along with weather predictions,
the current economic climate, and any special circumstances, such as events or holidays. Also
considered are the number of guests served, the type of food served, and the times of day for the
sales. Then the number of staff members needed to take care of that level of business must be
determined. This is decided based on the standards of the operation for production and service.
